There are virtually so many vegetables that are good for you it's hard to just start and talk about them. But I would have to say the most powerful vegetable is the beet.
The beet contains a group of antioxidants called the betacyanins. These are the source or their medicinal benefits. The beet helps with supporting the liver, it helps improve your circulation and it purifies your blood In fact, juicing beets produces amazing results including lowering your blood pressure and increasing your energy! You'll notice if you do juice beets it all comes out in the end (aka red bowel movements :)) If anybody's read anything from Dr. Oz you may know a little bit about beet juice. Dr. Oz says basically start with about a quarter of a cup of juice. It can be a very moving experience so start slowly with that there beet juice. Another way to eat beets is to cut them up in quarters and roast them with a little bit of garlic, olive oil and salt and pepper. Yum Yum Yum they taste really good!
